Brisaola according to Panzeri
Panzeri’s Brisaola stems from the desire to rediscover the flavors of our valley, by seeking the high quality of the raw material and using traditional techniques along generations.
Every single piece of meat is carefully selected by our skilled “bresaolat”, craftsmen performing ancient gestures expressing a hidden wisdom, for centuries and centuries. Salting is handmade by mixing salt with mountain herbs and our wine from the Rhaetian terraces, following a secret recipe. The slow seasoning is carried out using the natural ventilation of our valley… a clear breeze blows from its snowy peaks, reaching our “Brisaola” and giving a unique flavor.
Panzeri Brisaola is available in a smoked variant, too.
